I cooked up 2 cups of Quinoa as we are going to a pot luck soon and I will be taking this one dish with me. I have another dish in the refrigerator for us to eat during the week.
Quinoa – 1 cup cooked (any kind)
1 Kohlrabi – slice into bite size pieces
1 Spring Turnip – slice into bite size pieces
1 Carrot – slice into bit size pieces
Kale – break into pieces and spread in liberally
Blueberries – sprinkle a healthy amount into the salad
Dijon Mustard – (or any type you desire)
Pour 1/4 cup oil in bowl
Squeeze juice of 1 lemon into oil
Drop 1 TBS into bowl
Whisk ingredients until well blended, pour into Quinoa and stir until generously mixed into salad.
