Rice Pudding

I love Rice Pudding and prefer making my own as it is tastier and so delicious as I know what ingredients are in it.  Although I usually bake mine after simmering, the one I am sharing with you all today, is one I just cooked on the stove top.


Brown Rice Pudding


2 Cups Rice – already cooked (I used Organic Brown Basamati Rice)

1 1/2 Cups Organic Milk

1 1/2 Cups Heavy Whipping Cream – Milk form

2 Tsp Cinnamon – I like to use a generous amount – you can use less or more as you like!

1 Tsp Nutmeg

2 Tsp Vanilla

2 Eggs – well beaten – add after above ingredients have been simmering for about 10 minutes or so.

1/4 Cup Sugar (I used a dollop of Organic Amber Raw Agave Syrup for the sweetener               after my pudding was finished cooking.

A pinch of Himalayan Pink Salt



I put all ingredients into a stainless steel saucepan and simmer on low for around 20 minutes.  After cooking for 10 minutes I add two beaten eggs to the batch, stirring in while its bubbling and simmering and cook for 10 additional minutes.

After the pudding is finished and I pour it into my glass container, I sprinkle a rather healthy topping of Cinnamon (I love Cinnamon!), allowing it to cool, then cover, placing it in the Refrigerator overnight.

You can use whatever you prefer to sweeten; Maple Syrup, Agave Syrup, Brown Sugar, White Sugar, Coconut Sugar – I only add a bit as I don’t like my pudding too sweet.

You can add raisins after finished cooking, or dried cranberries, whichever you prefer. I am adding the dried cranberries to this batch.

You can also use just milk (or milk substitute) for the entire liquid part of this recipe, but I like it creamer and richer, so add the heavy whipping cream, which thickens it up nice, plus leaves a very nice tasting pudding!

Leaving out the eggs will help if you have any allergies and the recipe still works and remains tasty!  The eggs aid to the custard taste, and I love custard.  My next batch I am adding three eggs!

Feel free to use any type Rice you have on hand!

Adding a tablespoon of butter makes a creamer texture and flavoring that is simply decadent!

Then the next time I have a craving for something deliciously sweet and healthy, I just grab my bowl and scoop a nice heaping amount in a bowl, setting down and spooning this treat into my mouth, savoring the taste!
